AS We all known, This is A delicious fish with a summery flavor! Swordfish has become a favorite fish— it’s a fish we can all agree on! Due to it’s a firm fish, I’ve found it that the best suited for grilling, taking on grill marks beautifully and releasing from the grill with ease.And because of its mild flavor, I can quickly add vibrant flavors and become a dinner that the whole family will love.

1 orange, peeled, sectioned, and cut into bite-size
4 swordfish or tuna steak, cut into 1-inch thick(6 to 8 ounces each)
1 tablespoon pineapple juice concentrate
½ teaspoon ground black pepper
3 tablespoons orange juice
¼ cup diced fresh mango
1 tablespoon diced red bell pepper
2 teaspoons white sugar
1 tablespoon chopped fresh cilantro
2 tablespoons cut fresh mint
1/2 teaspoon salt
¼ teaspoon cayenne pepper
extra-virgin olive oil
Make the salsa: Grate oranges, pineapple chunks, mango, minced jalapeños, and squeeze 3 tablespoons of orange juice. Diced red bell pepper, sugar, and cilantro, mix well, and refrigerate covered.
Mix 1/2 cup orange juice, olive oil, cayenne pepper, and pineapple juice concentrate In bowl, place the swordfish steaks, and turn to coat well. Marinate the swordfish in the mixture for 30 minutes.
Prepare the z grills pellet smoke 7002F, set the heat to 240°F.
Gently brush both sides of the swordfish steak with extra olive oil; sprinkle with the remaining salt and the remaining pepper.
For charcoal or gas grills, grill the fish on a covered grill rack over medium heat for 8 to 12 minutes, or until you test the fish fillets with a fork, turn it once halfway through the cooking time.
