Poblano Pepper Rings
Serve these fried poblano pepper rings instead of onion rings for a mouthwatering dish-twist. Dipped in a a delicious batter and served with a spicy dipping sauce, these fried pepper rings are the perfect crunchy side dish or appetizer.

Ingredients
For the Pepper Rings:
5-6 poblano peppers, sliced
2 cups flour
2 teaspoons salt
2 teaspoons garlic powder
1-2 teaspoons cayenne pepper (depending on how much heat you like)
4 cups kettle cooked potato chips
3-4 cups buttermilk (depends on desired consistency)
Peanut oil for frying
For the Spicy Dipping Sauce:
1/2 cup mayonnaise
1/8-1/4 cup Sriracha sauce(depending on how much heat you like)
2 Tablespoons horseradish sauce
1 teaspoon paprika
1 teaspoon honey
1-2 teaspoons Worchestershire sauce
Instructions
In a small mixing bowl, mix together the spicy dipping sauce ingredients. Chill while making peppers.
In a fry pot or large Dutch oven, heat oil to 350 degrees F.
Pulse the chips in a food processor until finely ground.
In a medium sized bowl, combine flour, salt, garlic powder, cayenne pepper, ground potato chips. Mix.
Add buttermilk a cup at a time until you get the desired consistency of your batter (The more buttermilk you add the thinner your breading will be).
Remove the top from each pepper and scoop out the seeds. Slice into 1/4-1/2 inch thick rings.
Working in batches, dip pepper rings in batter and fry in hot oil. About 3-4 minutes or until golden brown.
Remove from oil and place on paper towel lined plate or cookie sheet.
Serve with spicy dipping sauce or dipping sauce of choice.
